Yesterday was my first day on the AIP (autoimmune Paleo/protocol) diet. Overall, It went very well. I did have my morning coffee without even thinking about it but that was the only oops I had yesterday. Maybe a sign that I love my coffee a little too much?? 🙂
I did end the day with a pretty bad headache but I rubbed some peppermint oil on my temples and it went away before I went to bed!
The biggest change I noticed yesterday was that I wasn’t bloated after every meal. That has been something I’ve been experiencing after every meal the last couple months. It was nice to eat and not be uncomfortable after!
My favorite recipe of the day was spaghetti squash chow mein with chicken. I found it on Pinterest from http://www.littlebitsof.com (http://littlebitsof.com/2014/10/spaghetti-squash-chow-mein/) and I modified it for AIP. Instead of soy sauce, I used coconut aminos, honey instead of brown sugar (and I cut it in half), and coconut oil instead of olive oil. I made a large batch so I can eat it all week for lunch!
